🥞 Masala Dosa

Masala dosa is a crispy South Indian crepe filled with spiced potato goodness. Crunchy outside, soft inside — it’s pure comfort food. 🌿

🛒 Ingredients

👩‍🍳 How to Make It

  1. Boil, peel, and mash the potatoes until smooth.
  2. In a pan, heat oil and sauté onions + chilies until golden.
  3. Add mustard seeds and curry leaves — wait for the magical splutter. 🌱
  4. Mix in the potatoes and spices. Your filling is ready!
  5. On a hot pan, spread dosa batter into a thin circle.
  6. Drizzle a little oil/ghee, cook until golden & crispy.
  7. Add filling, fold, and serve hot with chutney + sambar. 😋

📖 Cooking Terms

Saute
Quick cooking in a little fat, over high heat, stirring often.
Splutter
The happy popping sound when spices hit hot oil.
Ghee
Golden clarified butter with a nutty aroma, much loved in Indian kitchens.

🧀 Paneer Butter Masala

Paneer Butter Masala is creamy, buttery, and oh-so-heavenly. Soft paneer cubes swimming in a rich tomato gravy — best enjoyed with naan or rice. 🍛

🛒 Ingredients

👩‍🍳 How to Make It

  1. Purée onions & tomatoes separately.
  2. Melt butter, sauté ginger-garlic until fragrant.
  3. Add onion purée → cook golden. Add tomato purée + spices.
  4. Simmer until oil separates (that’s flavor unlocked!).
  5. Stir in cream, sugar & kasuri methi.
  6. Add paneer cubes gently. Cook for 2–3 mins.
  7. Garnish with coriander. Serve hot with naan/rice. 😍

📖 Cooking Terms

Purée
A smooth, blended paste or liquid.
Simmer
Cooking gently, just below boiling point.
Kasuri Methi
Dried fenugreek leaves — tiny, but mighty in flavor!

🍯 Gulab Jamun

Gulab Jamun is India’s sweet hug in a bowl. Soft golden dumplings soaking in fragrant sugar syrup — melt-in-your-mouth goodness. 🌸

🛒 Ingredients

👩‍🍳 How to Make It

  1. Knead khoya + flour + soda into a smooth dough.
  2. Roll into crack-free little balls.
  3. Fry on medium-low until golden brown.
  4. Make sugar syrup with cardamom, rose water & saffron.
  5. Drop fried balls in warm syrup, soak for hours (or overnight!).
  6. Enjoy soft, juicy Gulab Jamuns. 💖

Knead
Work dough with hands until smooth.
Khoya (Mawa)
Thickened milk solids used in Indian sweets.
Sugar Syrup
Sticky sweet liquid made by dissolving sugar in water.
